IoM GP2 - eats

Isle Of Man GP2 bar-b-qCamp Top Gear was well fed on our week long island stay in the Isle Of Man. Here's what we ate...

Ingredients:
Meat - wild boar, ribs, steak - lots of it
1 bottle ketchup
Soy sauce
Spices - peppercorns, fennel seeds, paprika, juniper berries
I whole bulb garlic, peeled and Bay leaves
1 orange, juice and rind
Tabasco chipotle sauce
Honey
Mustard
Salt

Method
Grind garlic, herbs and salt in a pestle and mortar. Mix all other ingredients together, preferably with your hands. Put meat in roasting tin and slather sauce all over it. Leave to marinade while you light the barbecue.

When coals are flaming, put roasting tin on the barbecue (this way it'll start cooking in the marinade without burning). When coals are white hot, remove meat from tin and put onto grill.

Sauce will drip on coals, and you should get lots of impressive flames. When cooked, serve with buns and more Tabasco.

Sides
Potatoes with pesto sauce: Boil some new potatoes. To make pesto sauce, grind together LOTS of basil, pine nuts, parmesan, olive oil and a clove of garlic. Wrap boiled potatoes and pesto sauce in foil and warm through on the bbq.

Green beans with chorizo and onion
Chop onion and chorizo and fry till onion is soft. Cook green beans. Pour onion and chorizo over beans and mix with a little olive oil and vinegar.

Finish off with marshmallows toasted in the campfire and lengthy discussions over the joys of carbon ceramic discs. Crawl off to tent and dream of tomorrow's closed-off open roads.

  • (Please read this with a Tennessee accent.) I like the idea about using the pan. Do y'all ever use ziploc's to marinate? I can't believe that I went to a car site and all I could think to talk about is food! What about cooking the whole mess on the engine blocks wrapped in tin foil? Seems to me that an auto-themed cooking method is in order. I've never had wild boar, how was it?

    All that food sounds lush, you should bring out a Camp Top Gear cookery book. I bet it would out-sell Gordon Ramsey.
